We recently had the incredible opportunity to collaborate with Shavi Roaster, one of the most forward-thinking coffee shops in Tbilisi. Our two brands quickly connected through a shared passion for crafting high-quality products—Shavi Roaster for the morning coffee ritual and Ambrosia Winery for the evening glass of wine. As the first coffee shop in Georgia to introduce the cupping practice to its customers, Shavi Roaster aligns perfectly with Ambrosia’s dedication to offering wine experiences that blend knowledge, appreciation, and the joy of discovery.
With Shavi Roaster’s master roaster Nika and our winemaker Olga leading the session, we hosted a combined cupping and wine tasting event. Guests explored the sensory parallels between coffee and wine, comparing aromas, uncovering shared notes, and tasting specialty coffees from Colombia and Rwanda before transitioning into a guided tasting of Ambrosia’s oaked Saperavi. This immersive experience highlighted how beautifully Shavi Roaster’s coffee and Ambrosia’s wine can complement each other.
During the session, guests were surprised to discover how many aromas overlap between Ambrosia’s oaked Saperavi and the specialty coffees presented by Shavi Roaster. Both worlds share notes of blackberry, dark chocolate, tobacco leaf, black pepper, and subtle vanilla—a sensory bridge that made the experience feel both familiar and unexpected. Saperavi, Georgia’s iconic deep-colored red wine, is known for its powerful structure and richly layered bouquet, which sommeliers often describe through a detailed analysis of its tannins, acidity, and evolving aromatic profile. Unlike most grape varieties, Saperavi is a teinturier, meaning its pulp and juice are naturally red; this rare characteristic gives it extraordinary depth and makes it one of the most distinctive wines in the world. Comparing its aromas with those of carefully roasted coffee showcased just how connected these two crafts truly are, each shaped by terroir, technique, and time.
